Beluga caviar comes only from the Caspian Sea, between Iran and the former Soviet Union. When there was a Soviet Union, caviar production was tightly controlled. Now, capitalism has created a larger market for beluga in Russia, as well as spawned numerous freelancers who have overfished increasingly polluted waters (though the degree of pollution is debated). There is a U.S. embargo on Iranian caviar. And, on top of all that, beluga represents only about 10 percent of the world’s total caviar production. Beluga eggs are the largest of the three, though even they range in size. For years, beluga eggs were graded 000, 00 or 0, with 000 being the largest and best, but that system is pretty much passé.
